Free-roaming luwaks — wild Asian palm civets — forage at night, choosing only the ripest, sweetest cherries by scent. No human, and no machine, can match their instinct.

As the cherries pass through the civet, natural enzymes transform the bean from the inside out. This is the secret behind kopi luwak’s signature smoothness and low bitterness.
